Lemon Bow-Tie Pasta

This light, chilled pasta is a summer favorite but adds a little zest to any meal throughout the year. The garlic, lemon and parsley balance each other out quite nicely. I like to serve it with grilled lemon-peppered chicken for an easy meal.

I created this recipe thinking of the wonderful pastas served at  Zinc Cafe & Market in Laguna Beach, CA.


 12 oz. Bow-Tie Pasta

1 T. Salt

6 T. Extra-Virgin Olive Oil

3 garlic cloves, minced

1/2 c. chopped parsley

6-7 T. fresh squeezed lemon juice


 Boil water. Add salt and pasta. Drain. Toss w/ 1 T. olive oil. Cover and cool in refrigerator for 1-24 hours. Whisk remaining ingredients and add to pasta.
