Corn Casserole

 A Co-worker of mine used to make this for every pot-luck we had. When I transfered stores I asked her for the recipe so I could continue making this delicious dish! She had the recipe memorized and jotted it down on a scrap of paper for me. It has since become a family favorite!


1 cube of butter

1 large yellow onion (diced)

1 large bell pepper (diced)

2 eggs

1 can creamed corn

1 can whole kernel corn 

1 box Jiffy corn muffin mix

1 8 oz sour cream

1 8 oz pkg Sharp cheddar chesse


Heat oven to 400°

Melt cube of butter and sauté diced onion and diced bell pepper until soft. About 10 minutes, set aside.

In a large bowl beat 2 eggs. Add creamed corn, whole kernel corn (with juice), and Jiffy corn muffin mix. Mix well.

Grease the bottom of a casserole pan and scoop corn mixture into pan. Dribble on the onion/bell pepper mix on top of corn mix. Dollop cream cheese over the top making sure you have covered most of the casserole. Finally top the entire casserole with the sharp cheddar cheese. You may not need the entire package, but I love cheese and use the whole thing.

Bake 30-35 minutes. Let cool about 10 minutes.
