Zucchini Bread

 My Mom used to make this when I was a kid. I always used to ask her to make it for a special treat, especially in the summer. It's really good for breakfast.


 2 C. Sugar

1 C. Oil

3 Eggs

2 C. Shredded Zucchini (raw)

1 Tsp. Vanilla

3 C. Flour

1/4 Tsp. Baking Powder

1 Tsp. Baking Soda

1/2 Tsp. Salt

1 Tsp. Cinnamon

1 Tsp. Ginger (ground)

1 Tsp. Cloves (ground)

1 C. Chopped nuts ( I prefer walnuts)


Heat oven to 350°

Combine Sugar, Oil, Eggs, Vanilla, and Zucchini. Mix together and set aside.

In separate bowl sift  flour with baking powder, baking soda and salt. Mix together with Zucchini mixture. Add Cinnamon, Ginger and Cloves. 

Add chopped nuts.

Pour into 2 baking loaves and bake for one hour.

***For less sweet you can use 1 3/4 C Sugar.
