Southern Fried Tofu and Vegan Mac & Cheese

Southern Fried Tofu -

- 2 containers of extra firm tofu
- 1 1/2 cups nutritional yeast
- 2tsp salt
- 1tsp onion powder
- 1tsp garlic powder
- 1/2tsp paprika
- 1/2tsp dried tarragon
- 1/2tsp dill weed
- 1/2tsp dried basil
- 1/2tsp oregano
- 1/2tsp curry powder
- 1/4tsp dry mustard
- 1/4tsp chipotle pepper
- 2/3 cup of soy milk (unflavored)
- 2tsp lemon juice
- 2/3 cup of flour

Mac & Cheese

- 1 1/4 cup water
- 1 cup soy milk (unflavored)
- 3/4 cup nutritional yeast
- 3tbls corn starch
- 1tbls lemon juice
- 1tsp salt
- 1/2tsp garlic powder
- 1tsp onion powder
- 1/2tsp dry mustard
- 1/2tsp paprika
- 1/2tsp tumeric
- pinch a cayenne pepper
- 2tbls tahini
- 1tsp miso sauce (I've also used miso dressing as a substitute)
- black pepper to taste


Southern Fried Tofu

- Mix all ingredients on the list from nutritional yeast to chipotle pepper in a bowl until well mixed and set aside
- Combine soy milk and lemon juice in its own bowl and stir together
- Place flour in a large bowl by itself
- Take each block of tofu and slice it longways in half so the block is thinner. Slice the tofu into small triangles. Do not dry out tofu, it needs to be moist.
- In a large skillet place about an inch of vegetable oil and turn on medium heat.
- Take each piece of tofu, dip it into the flour bowl, followed by the milk and lemon juice mixture, and then cover all the way with the nutritional yeast mixture.
- Carefully put the coated tofu into the oil, let it brown slightly on each side and remove with tongs. Place a few sheets of paper towel onto a plate and then put the tofu onto the plate to let cool off a little and to let the oil drain.
- Enjoy the tofu as you would fried chicken, with any dipping sauce you prefer or alone.

Vegan Mac & Cheese

- Place a large pot of water on the stove on high til it starts to boil
- Pour 2tlbs of oil and a dash of salt into boiling water
- Pour your favorite pasta into boiling water, stirring occasionally.
- Mix list of ingredients from above from the water to the miso sauce. Stir well.
- Once the pasta is done, drain, lower heat to a low medium
- Pour in bowl of ingredients and mix well
- Let the sauce thicken up, stir frequently
- Once its thick enough, remove from stove and enjoy.
