Cupcake Burgers (#cupecakeburgers)

Backstory: these were inspired by a comment from my husband and friend who are both on diets. They were complaining about not being able to eat anything and somehow the idea of #cupcakeburgers was born. It was a joke I am sure between the two of them, but it was his birthday and I thought for sure I could find something to resemble a #cupcakeburger. So I did what any good wife would do and I googled. And the #cupcakeburger was born.

I should say that these are so super hard to make and they take soooo much time and it's so hard to make them look like actual burgers, but I can't lie to you. You however, should feel free to lie to others who compliment you on how fantastic they look.

They are super easy - the hardest part is making the icing red enough. However, there are two options - 1. buy it (I don't suggest this option) or 2. find some red gel food coloring. I suggest option 2.

Now, go make some and see for yourself. Remember, the key is telling everyone how hard it was to make and how long you slaved over them because well, that's how much you love and care for them.


1 package yellow cake mix
1 package chocolate cake mix
2 cups shredded coconut
red, green, and yellow food coloring

Buttercream Frosting:

1 cup butter (no substitutes), softened
8 cups confectioners' sugar
2 teaspoons vanilla extract
1/2 cup milk

In a mixing bowl, cream butter. Beat in sugar and vanilla. Add milk until frosting reaches desired consistency.


1. Make the cupcakes as the package directs, however, only fill the
container half full - and make sure to spray the pan with Pam for easy
removal. Also, make sure to let the yellow cupcakes bake a little
longer and get a little browner on top for the full burger bun effect.

2. Mix shredded coconut and 2 drops green food coloring - you can add
more green if you want it darker, but remember, once you drop it in
you can't take it back out.

3. Take half the food coloring mix in 1 tsp. yellow food coloring or as
much as it takes to make the frosting into a cheese color.

Take the remaining frosting and add as much red gel to it to make it
look like ketchup - if you use liquid food coloring from the grocery
store - expect to use at least 4 containers...gel is the way to go if
you can find it.

Put both frostings into a pasty bag - or if you are like me put them
in to a plastic bag and cut a small hole in one corner.

4. Now for the fun part, once cooled, cut the yellow and chocolate
cupcakes in half using a serrated knife.

5. Take your pasty bags (or plastic bags) of frosting and squirt away.
Ok, a little more direction. In a circular motion, squirt the red
frosting on the bottom hamburger bun (bottom of yellow cupcake), place
half of the burger on top (half chocolate cupcake), squirt the yellow
frosting in a circular pattern on the top of the burger and sprinkle
the green coconut on top, and finally, place the top of the hamburger
bun (top of yellow cupcake) on top.

And viola. You are a genius. A master of the kitchen.

P.S. If you have the time to make the cupcakes from scratch - do it. I however, did not and I had to make tons so I purchased the mix from Smart and Final.

Nice! Thanks for laying out the process because these are going to be a big hit around here! BTW I think cupcakes (regular cupcakes) from scratch are over rated. This is one time chemicals are our friends!

Gel icing color is the best but red is finicky. I tried to use old color (6 months old) and the pigment wouldn't darken the same. So buy fresh! You will be happier.

I meant just a standard cupcake. Not a special flavor or type (like flourless). I am sure yours rock. But you might need to prove it to me;).
