Sweet Potato Bake

This dish is a family favorite passed to us from Sarah's cousin.  It's easy to prepare, tastes great, and fills the table with beautiful colors.  Enjoy!


6 med sweet potatoes
1/2 cup packed brown sugar 
3 Tbsp butter
1 tsp apple pie spice
1/4 tsp salt
1 orange, zested and juiced
2 medium granny smith apples, cored and sliced
1/2 cup cranberries


Skin the sweet potatoes and cut into 1/2 thick slices.  Place in a large pot and bring to a boil for 20-25 min or until fork tender.  Drain in a colander and allow to cool.  Once cool, spread them in a 9" x 13" pyrex dish.

Preheat oven to 375.

Place brown sugar, butter, salt, and spice in a microwave safe bowl.  Add 1 tsp orange zest along with all the orange juice.  Microwave this mixture on high for 1 minute.  Add the apples to the mixture and microwave for two minutes.  Pour this mixture over the top of the sweet potatoes and sprinkle with cranberries.

Bake at 375 for 20 minutes, basting frequently.
