Spinach and Sausage Egg Casserole

 This recipe was created out of desperation. I had to make an egg dish for a MOPS meeting last year and didn't have the ingredients I needed for any of my standard dishes. So I messed about and threw a few ingredients together and this is what I came up with! I had wanted something with a little more meat for NerdDad and a little more veg for my motherly conscience;).

This has now become my go to potluck dish! I even had to make it twice last week!


 1 pound cooked and crumbled sausage 
1 thawed and drained package of chopped spinach (10 oz) 
2 cans of cream of mushroom soup (or cream soup of your choice)
9 eggs 
3/4 cup milk 
1/2 tsp pepper 



This is a 2 bowl process but it is super easy. In one bowl mix sausage, spinach and soup. In the other bowl beat the eggs and mix in milk and pepper. Then combine together and dump it into a 9 by 13 pan. Top evenly with shredded cheese. Bake at 375 degrees for 40-45 minutes or until a knife inserted comes out clean.

I am not a morning person so I brown up the sausage and drain the spinach the night before, mix them together and stash them in the frig. Then it just takes a couple of minutes to finish putting it together in the morning.

 I said it serves 10 but it will serve plenty more in the potluck world;).

Thanks for this idea!  I am actually looking for a new recipe for my MOPS group on Tuesday.  I have a bunch of fresh spinach that I need to cook down, a pound of sausage, and a bunch of eggs.  This fits the bill exactly!  Here's hoping it tastes as good as it looks in the picture...
