Tomato Parmesan Strata

Ingredients

4-5 slices of bread (cut into 1 inch cubes)

1/2 cup chopped onion

2-3 cups fresh spinach

1 tblsp minced garlic

1 large egg

4-5 egg whites

1 cup chopped tomatoes

Pinch of salt and pepper

1/2 cup grated parmesan cheese

Instructions

Preheat oven to 375

In a coated casserole dish, spread out a thin layer of bread cubes.

Heat some olive oil in a large frying pan. Saute onion and garlic until tender - about 3 minutes. Add spinach and lightly stir as it wilts down.

In a large bowl, mix eggs. Fold in tomatoes and seasoning (Salt/Pepper). Add onion/spinach mixture to eggs.

Pour egg mixture evenly over bread. Top with parmesan.

Bake uncovered for 20 minutes or until just started to brown. Let sit for 5 minutes before serving.
