Autumn quinoa salad with roasted butternut squash, cranberries and pecans

Ingredients

 Recipe from the cooking blog Gluten-Free Goddess.

  • 1 cup red quinoa
  • 1 butternut squash, peeled and diced
  • 1/2 cup fresh or frozen cranberries, halved or chopped
  • 1/2 medium red onion, diced
  • 1/2 cup pecans, chopped
  • garnish: parsley, spices, salt and pepper

 

 

Instructions

 

  • Cook one cup red quinoa. As mentioned on the GFG blog, quinoa cooks perfectly in a rice cooker!
  • While the quinoa is cooking, preheat the oven to 375.
  • On a roasting pan add: 1 butternut squash, peeled and diced; 1/2 cup fresh or frozen cranberries, halved or chopped; 1/2 medium red onion, diced fine; 1 clove garlic, minced.
  • Drizzle the veggies with olive oil and a little maple syrup. Sprinkle with sea salt, and toss it all together.
  • Roast until squash is tender. It took me about 30 minutes.
  • While veggies are roasting, toast 1/2 cup chopped pecans in a skillet until fragrant.
  • To assemble: GFG recommends tossing the cooked quinoa, with the roasted veggies and pecans in a skillet until it's all heated through. Add garnish: fresh chopped parsley; cumin, ginger or curry; and salt and pepper.
  • Drizzle the salad with a bit of fruity olive oil, and enjoy!

Do you put it on the brown rice setting? Also, were do you get your red quinoa. Saw it at Vons today and was hoping for cheaper!

I got my quinoa from Whole Foods - they sell it in packages, and maybe in the bulk section also?
