Dad's Scalloped Corn

Every year my dad makes his Scalloped Corn for Thanksgiving dinner. It's so popular, we have to quadruple the recipe every year. After multiple calls this weekend asking for the recipe, I realized it was about time we posted it for all the world to enjoy.


4 tbls Butter
1 14oz can Creamed Corn
1 Egg - beaten
1 cup Whole Milk
1 4oz can diced Green Chiles
1/4 cup chopped Yellow Onion
1 sleeve Ritz Crackers crushed approx 1 cup
Couple of dashes of Worcestershire Sauce
salt and pepper to taste


Preheat oven to 350.
Mix corn, egg, milk, chiles, onion, seasonings, and most of the crackers (save a few Tbls) in a bowl.
Melt butter in saucepan. Pour approx 2/3 of it into 8x8 casserole dish and swirl around to coat sides. Pour mixture into dish. Add remaining crackers to butter left in saucepan. Top casserole with buttered crackers.
Bake for 40-45 minutes, or until set.
