Salsa Chicken

My girlfriend found this recipe for me. She knew that I needed to start eating better and if a recipe wasn't exteremly easy then I wouldn't even bother with it.
The first time I tried this recipe I used HOT! Salsa and just about burned my lips off. I mean they were on fire long after I was done eating. Oh yeah, I added a jalapeno for an "extra" kick beacause I didn't think it would be hot enough. Man, was I ever wrong on that one. Even though my lips and mouth were numb the flavor was mouth watering and the chicken was exteremly moist.
On my second attempt I decided to be a little more catious, used a medium salsa and conviently forgot about adding a jalapeno. This time around I couldn't believe how amazing it was and that I cooked it. My mouth is watering just thinking about it. When you take your first bite you're not really sure what to think about it until the sweet fills your mouth with joy, like bitting into a piece of candy you've been craving all day. Then quickly after the sweet the kick of salsa quickly follows. I remember thinking as I was simeltanously reaching for a glass of water, this is great and it was easy. I love this recipe so much I had to start buying salsa by the gallons. No Joke, by the gallons. Meduim of course. Thanks Beautiful


4 Chicken Breasts (boneless and skinless)
1 cup salsa
2 tbsp Brown Sugar
1 tbsp Spicy Mustard


Preheat the oven to 350 degrees. While that is warming up, in a medium size bowl mix together the salsa, brown sugar, and spicy mustard. Place the chicken breast in a nonstick backing dish big enough to fit all four pieces. Pour the mixture of salsa, brown sugar, and spicy mustard over the chicken. Spread evenly. When ready, place the chicken in the oven and cook for 20 min. After 20 minutes take out of oven and let cool 2-3 minutes. Serve.
