Grilled Corn Salad

  • 3 cups grilled corn, cut off the cob
  • 1/4 cup mayonnaise or crema
  • juice from 2 limes (about 3 tablespoons)
  • 1/2 cup crumbled cotija or queso fresco 
  • 1 tbs. smoked paprika or chile powder
  • 1/4 cup cilantro, chopped


Mix corn with mayonnaise. Squeeze in lime and cheese and toss. Top with chile powder and cilantro and mix lightly. Serve cold.
