Chicken Broccoli Cheese Casserole

  • 1 (12.5 oz.) can chunk Chicken  
  • 3 to 4 cups cooked White Rice
  • 2 (15oz.) cans Mushroom Soup 
  • 2 cups chopped Broccoli
  • 10-12 oz. Velveeta Cheese 
  • 2 cups milk
  • Salt & Pepper to taste


Preheat oven to 400°.  Drain liquid from chicken into a bowl.  Mix liquid with milk and soup.  Dice or slice Velveeta Cheese.  In large casserole dish, combine drained Chicken with Cheese, Broccoli, and cooked Rice.  Add Soup mixture.  Salt and Pepper lightly.  Cover casserole and bake for 45 minutes or until it starts to bubble and Cheese appears melted.  Remove from oven when slightly browned on top.  Allow to stand for 10-15 minutes before serving.
