Sausage Jambalaya Casserole

Ingredients

  • 1 cup uncooked regular rice 
  • 2 cups hot water
  • 1 lb. ground beef  
  • 3 cloves garlic, minced
  • 1 medium size green pepper, chopped
  • ½ cup chopped green onion
  • ½ tsp. salt   
  • ¼ tsp. pepper
  • 1 lb. smoked sausage, cut into ½-inch slices
  • 1 (28 oz.) can tomatoes, undrained and chopped

Instructions

Combine rice and water in a 2-quart casserole, stirring well.  Cover and microwave at high for 5 minutes.  Stir well.  Cover and microwave at medium power for 11 to 15 additional minutes; stir well, and set aside.  Crumble ground beef into a 2 ½-quart casserole; stir in sausage, green pepper, onion, and garlic.  Cover and microwave at high for 10 to 11 minutes or until meat is done, stirring twice.  Drain well.  Stir in rice and remaining ingredients.  Spoon half of mixture into a 2-quart casserole; cover with foil and freeze.  Spoon remaining mixture into another 2-quart casserole.  Cover and microwave at medium high for 8 to 10 minutes or until heated. 

To serve frozen casserole, remove from freezer and discard foil wrapper.  Cover and microwave at medium low for 25 to 30 minutes, rotating and stirring after half the time.  Microwave at medium high for 8 to 10 minutes or until thoroughly heated.
