Three Layer Carrot Cake

Ingredients

  • 3 cups flour   
  • 3 cups sugar
  • 4 ½ tsp. cinnamon  
  • 1 tbsp. baking soda
  • 6 eggs    
  • 3 cups carrots, grated
  • 2 cups cooking oil  
  • 1 ½ cups pecans or walnuts, chopped

ICING:

  • 8 oz. cream cheese  
  • 1 stick butter
  • 1-1/3 cups powdered sugar 
  • 1/8 tsp. ground cloves
  • 1/8 tsp. ground nutmeg  
  • 1/3 tsp. cinnamon
  • 1 ½ tsp. vanilla

Instructions

Preheat oven to 350 degrees. Grease and flour 3 9-inch pans (or use Baker's Joy).  Mix flour, sugar, cinnamon, and baking soda.  Add eggs, carrots, oil, and nuts.  Mix well.  Pour into 3 pans.  Bake 40-50 minutes in 350 degree oven.  For icing, beat cheese, butter, and vanilla.  Add sugars, spices, and vanilla gradually.  Beat well.  Refrigerate until firm before frosting cake.
